How to Survive Homeschooling Without a Substitute Teacher

~More of a personal post....venting just a little bit... about how I'm am surviving this week without a Substitute Teacher. 

These last two weeks have been a bit of a trial for me as a Mommy and as an Educator to my kiddos. Last week my son was diagnosed with pneumonia, and my daughter also had a pretty severe cold. We took a couple sick days at the end of the week, and I adjusted our lesson plans to make up the work this week.

Well, as I am sure many of you Moms out there know will happen, now the "nurse" has caught the bug... yep that's me! I have been super sick since Monday. Trying to keep up with my son's meds and breathing treatments, laundry, and everyday chores.... not to mention meals. Feeling ready to collapse over here.Then there's the incredible pressure of keeping up with their schooling, which we were already a few days behind on.

These are the days where a Homeschooling Mommy just wants to scream, cry or like I did yesterday....both! I caught myself thinking.... where's a substitute teacher when you need one? It occurred to me after I had that breakdown {that's how it always happens isn't?}.... I need to adjust my own lesson plans and expectations of myself.

Kid Friendly Chili {Frito Boats}

When I was growing up, our church always had a food stand at a local fall festival, and we served Frito Boats... lots and lots of Frito Boats! Frito Boats are simply corn chips served with a chili in the middle, and topped with shredded cheese.

 
Always loved them, but since I really do not enjoy the taste of beans in my chili... my recipe is quite a bit different from what we used to make way back when {more years have passed then I care to admit..LOL}. I have taken my childhood favorite, Frito Boats, and changed it up to fit the picky eaters {my kiddos} at our house while sneaking in a few extra veggies.



Give this tasty Kid Friendly Chili recipe a try one night this fall..... bet they will gobble it down too! =)
