Thought I'd share a recipe my family loves. It's pretty easy and very.... you guessed it.... YUMMY! I made this recipe using Mara's Pasta's Spaghetti, but you could use your pasta of choice. (To read my review of Mara's Pasta go HERE)
~The best part about this recipe is that it doesn't need a lot of chicken, because of all the veggies and pasta. Enjoy! =)
My Yummy Pasta and Chicken
A healthy, filling and very yummy chicken dish with veggies, parmesan cheese, and pasta.

Serves- 4 (My family of 4 which includes 2 kids... usually has some leftovers)
Calories per serving: 347
Ingredients:
2 tablespoons olive oil - separated
2 skinless/boneless chicken breasts or (4-6) chicken tenders- Cubed (for more people add another chicken breast)
1/2 package frozen veggie mix (I use a broccoli, cauliflower, and carrot mix)
2 cloves minced garlic
12 ounces spaghetti, penne, or angel hair pasta (if serving more people add extra pasta)
1 1/2 cups chicken broth ( I use low sodium/fat free)
1 teaspoon basil
1/2 teaspoon oregano
1/2 cup Parmesan cheese grated

Directions:
1- Heat 1/2 of the olive oil in a large skillet on medium heat. Add cubed chicken. Cook through 6-9 minutes. Then drain on paper towels.
2- Heat remaining olive oil.....{ start the water for pasta now}.....add minced garlic. 1 minute
3- Then add the frozen veggies.... {chop any that are not bite size} .... stirring them constantly for about 6 minutes or until cooked through.
4-Cook Pasta according to package directions. {set timer so you do not cook too long}
5-Add chicken broth, basil,oregano, and one half of the Parmesan cheese to skillet with veggies. stirring until cheese is melted. 1 minute
6- Add cooked chicken and let simmer on low heat for about 5 minutes. Stirring occasionally.
7- Drain pasta and place in a large serving bowl or add to skillet with chicken mixture.
8- Top with Chicken mixture and the 1/2 cup of Parmesan cheese. Serve immediately
